Soigne by Stephen Clare—In 2015, I launched a luxury catering company, SoigneSC.com, built on farm-to-table ethics and Michelin-star quality, avoiding dairy and simple carbs as best I could. The idea was luxurious food and the highest quality ingredients but without elevating your blood sugar and giving you an insulin spike that makes you sleepy and fatigued like after a big pasta dinner.
